Cooking Guidelines
To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:
- Steak and Pork 145° F (rest cooked meat, 3 minutes) |
- Seafood 145° F |
- Chicken 165° F |
- Ground Beef 160° F |
- Ground Turkey 165° F |
- Ground Pork 160° F

1 Bake the Corn and Rice
Turn oven on to 425 degrees. Let preheat, at least 10 minutes. Thoroughly rinse any fresh produce and pat dry.
Add corn to one provided tray and season with 1/4 tsp. salt and 1/4 tsp. pepper. Push to one side of tray and top with butter (to taste).Add rice to now-empty side. Cover tray with foil.Bake covered in hot oven until heated through, 25-30 minutes.While corn and rice bake, continue recipe. -
2 Add the Meatballs
In a mixing bowl, combine panko and 1/4 cup water. Rest, 1 minute.
After 1 minute, add ground beef, chile and cumin rub, and garlic salt. Mix until thoroughly combined. Form into 12 evenly-sized meatballs and place in second provided tray. -
3 Bake Meal and Make Sauce
Bake uncovered in hot oven until meatballs reach a minimum internal temperature of 160 degrees, 13-16 minutes.
Carefully remove both trays from oven and drain any excess liquid from meatballs tray.In another mixing bowl, combine enchilada sauce and sour cream.To serve, top meatballs with sauce and garnish corn with cheese. Bon appétit!
