    Once water is boiling, add noodles and cook until tender, 4-5 minutes. reserve 1/4 cup pasta water.

    prepare the ingredients

    mushrooms into 1/4" slices.

    Cut stems into 1/4" slices and coarsely chop leaves.

    Trim and slice white portions of green onions into 1/2" pieces. Thinly slice remaining green onions on an angle. Keep white and green portions separate.

    large non-stick over medium-high heat with 2 tsp. olive oil.
