You Will Need
- 1 Small Pot
- 1 Microwave-Safe Bowl
- 1 Large Non-Stick Pan
- 1 Microwave
- 1 Colander/Strainer
Before You Cook
Cooking Guidelines
To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:
- Steak and Pork 145° F (rest cooked meat, 3 minutes) |
- Seafood 145° F |
- Chicken 165° F |
- Ground Beef 160° F |
- Ground Turkey 165° F |
- Ground Pork 160° F

If using ground turkey, break up until turkey reaches minimum internal temperature, 6-8 minutes.

1 Cook the Rice
Bring a small pot with rice, piri piri seasoning (use less if spice-averse), and 1 1/4 cups water to a boil.
Once boiling, reduce to a simmer, cover, and cook until rice is tender, 15-18 minutes.Remove from burner and set aside.While rice cooks, continue recipe. -
2 Prepare the Ingredients
Drain and rinse beans in a colander/strainer.
Halve and peel onion. Slice halves into thin strips. -
3 Cook the Filling
Place a large non-stick pan over medium-high heat.
Add ground beef and onions to hot, dry pan. Break up meat until no pink remains and beef reaches a minimum internal temperature of 160 degrees, 4-6 minutes.Drain any excess liquid, if desired. Pan will be hot! Use caution.Add 2 Tbsp. water, beans, and 3/4 the taco seasoning (reserve remaining for sauce). Stir occasionally until combined and beans are heated through, 1-2 minutes.Remove from burner. -
4 Assemble the Burritos
Wrap tortillas in a damp paper towel. If tortillas come folded, keep folded.
Microwave until warm, 30-60 seconds.Carefully remove from microwave.Place tortillas on a clean, flat work surface. Evenly divide ground beef mixture, rice, cheese, and half the sour cream (reserve remaining for garnish) among tortillas.Fold sides of tortilla toward center, then roll bottom edge towards the top, enclosing sides tightly. -
5 Heat Sauce and Finish Dish
In a microwave-safe bowl, combine enchilada sauce (to taste) and remaining taco seasoning (to taste).
Microwave uncovered until heated through, 1-2 minutes.Carefully remove from microwave.Plate dish as pictured on front of card, slicing burrito, if desired. Top with sauce (to taste) and remaining sour cream. Bon appétit!
