Cooking Guidelines
To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:

Meatlovers! If using protein, cook in a medium non-stick pan over medium heat with 1 tsp. olive oil.

If using antibiotic free chicken, pat dry. Cook until chicken reaches minimum internal temperature, 5-7 minutes per side.

If using salmon, pat dry. Add salmon, skin-side up first, and cook until salmon reaches minimum internal temperature, 4-6 minutes per side.

If using sirloin steaks, pat dry. Cook until steak reaches desired doneness, or 4-6 minutes per side for medium/medium-well. Rest, 3 minutes. Steak thickness can vary; if you receive a thinner steak, we recommend checking for doneness sooner.

If using trout, pat dry. Add trout, skin-side up first, and cook until fish reaches minimum internal temperature, 2-3 minutes per side.

1 Prepare the Ingredients
Trim and halve yellow squash lengthwise. Cut into 1/4” half-moons.
Trim and thinly slice green onions on an angle, keeping white and green portions separate. -
2 Cook the Gnocchi
Line a plate with a paper towel.
Place a large non-stick pan over medium heat and add 1 Tbsp. olive oil.Add gnocchi to hot pan. Stir occasionally until tender and golden-brown, 5-7 minutes.Transfer gnocchi to towel-lined plate.Keep pan over medium heat; no need to wipe clean. -
3 Cook Vegetables and Add Gnocchi
Add 1 Tbsp. olive oil, yellow squash, mushrooms, garlic salt, and white portions of green onions to hot pan. Stir occasionally until slightly browned, 4-5 minutes.
Add gnocchi and stir occasionally until combined and vegetables are tender, 1-2 minutes.Reduce heat to low. -
4 Add Sauce and Finish Dish
Add cream base, pesto, and a pinch of salt to hot pan. Stir to combine and bring to a simmer.
Once simmering, stir occasionally until sauce is slightly thickened, 2-3 minutes.If too thick, add water, 1 tsp. at a time, until desired consistency is reached.Remove from burner.Plate dish as pictured on front of card, topping gnocchi with cheese, green portions of green onions, and crispy tomatoes.
