Cooking Guidelines
To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:
- Steak and Pork 145° F (rest cooked meat, 3 minutes) |

1 Cook the Pasta
Once water is boiling, add pasta and cook until al dente, 6-8 minutes.
Remove from burner. Reserve 2 cups pasta cooking water. Drain pasta in a colander/strainer and set aside. Reserve pot; no need to wipe clean.While pasta cooks, stem and mince thyme.Mince garlic. -
2 Start the Mac and Cheese
Return pot used to cook pasta to medium heat and add 2 tsp. olive oil.
Add butter to hot pot. Stir occasionally until melted, 1-2 minutes.Add garlic, half the thyme (reserve remaining for topping), and flour. Stir often until thyme is fragrant and no dry flour remains, 2-3 minutes.Add 1 1/2 cups reserved pasta cooking water and cream cheese. Stir to combine and bring to a simmer. -
3 Finish the Mac and Cheese
Once simmering, add half the cheddar (reserve remaining for topping), Asiago, seasoned salt, and a pinch of pepper to hot pot. Stir occasionally until combined and sauce is slightly thickened, 2-3 minutes.
If too thick, add additional reserved pasta cooking water, 1 Tbsp. at a time, until desired consistency is reached.Add pasta and stir often until coated, 1-2 minutes.Remove from burner. -
4 Bake Mac and Cheese and Finish Dish
Transfer mac and cheese to prepared casserole dish. Evenly top with remaining cheddar, Parmesan, panko, remaining thyme, and 1 Tbsp. olive oil.
Bake uncovered in hot oven until topping is golden-brown, 15-20 minutes.Carefully remove from oven. Bon appétit!
