Cooking Guidelines
To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:
- Steak and Pork 145° F (rest cooked meat, 3 minutes) |

- Ground Turkey 165° F |

1 Cook the Rice
Drain beans.
Bring a small pot with rice and 11/4 cups water to a boil.Once boiling, add beans, 1/4 tsp. salt, and an additional pinch of salt.Reduce to a simmer, cover, and cook until rice is tender, 15-18 minutes.Remove from burner and set aside.While rice cooks, continue recipe. -
2 Prepare the Ingredients
Halve grape tomatoes.
Drain tofu and cut into 1" dice.Stem and mince cilantro.Halve and peel onion. Cut halves into 1/4" slices. -
3 Cook the Tofu
Line a plate with a paper towel. Place tofu on towel-lined plate. Top with paper towels, then press gently but firmly to remove excess moisture.
Place a large non-stick pan over medium heat and add 2 tsp. olive oil.Add minced garlic and parsley and onions to hot pan and stir occasionally until fragrant, 1-2 minutes.Add tofu and 1/4 tsp. salt and stir occasionally until golden-brown, 5-6 minutes. -
4 Make the Sauce
Add grape tomatoes, crushed tomatoes, taco seasoning, 1/2 cup water, and a pinch of salt to hot pan. Reduce heat to medium-low.
Stir occasionally until sauce thickens, 5-6 minutes.Remove from burner. -
5 Finish the Dish
Plate dish as pictured on front of card, topping rice and beans with tofu and garnishing with crispy jalapeños (to taste) and cilantro. Bon appétit!
