Before You Cook

Cooking Guidelines

To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:

  • Steak and Pork 145° F (rest cooked meat, 3 minutes) |
  • Seafood 145° F |
  • Chicken 165° F |
  • Ground Beef 160° F |
  • Ground Turkey 165° F |
  • Ground Pork 160° F

    Cook the Rice

    Drain beans.

    Bring a small pot with rice and 11/4 cups water to a boil.

    Once boiling, add beans, 1/4 tsp. salt, and an additional pinch of salt.

    Reduce to a simmer, cover, and cook until rice is tender, 15-18 minutes.

    Remove from burner and set aside.

    While rice cooks, continue recipe.

    Prepare the Ingredients

    Halve grape tomatoes.

    Drain tofu and cut into 1" dice.

    Stem and mince cilantro.

    Halve and peel onion. Cut halves into 1/4" slices.

    Cook the Tofu

    Line a plate with a paper towel. Place tofu on towel-lined plate. Top with paper towels, then press gently but firmly to remove excess moisture.

    Place a large non-stick pan over medium heat and add 2 tsp. olive oil.

    Add minced garlic and parsley and onions to hot pan and stir occasionally until fragrant, 1-2 minutes.

    Add tofu and 1/4 tsp. salt and stir occasionally until golden-brown, 5-6 minutes.

    Make the Sauce

    Add grape tomatoes, crushed tomatoes, taco seasoning, 1/2 cup water, and a pinch of salt to hot pan. Reduce heat to medium-low.

    Stir occasionally until sauce thickens, 5-6 minutes.

    Remove from burner.

    Finish the Dish

    Plate dish as pictured on front of card, topping rice and beans with tofu and garnishing with crispy jalapeños (to taste) and cilantro. Bon appétit!
