  1. 1

    Toast the Flatbreads

Place flatbreads, flat-side up, on prepared baking sheet.

Toast in hot oven until flatbread edges have browned, 10-12 minutes.

    Carefully remove from oven.

    While flatbreads toast, continue recipe.

  2. 2

Prepare Ingredients and Make Artichoke-Cheese Mixture

Drain artichokes, rinse, and pat dry. Finely chop.

Peel and halve shallot. Slice thinly.

In a mixing bowl, combine softened cream cheese, artichokes, grated cheese, softened butter (to taste), and a pinch of salt and pepper. Set aside.

  3. 3

    Cook the Shallots

Place a small non-stick pan over medium-low heat and add 2 tsp. olive oil.

Add shallots and a pinch of salt to hot pan. Stir occasionally until browned and tender, 4-6 minutes.

If pan is dry, add water, 1 Tbsp. at a time, as needed.

    Remove from burner.

  4. 4

    Assemble and Bake the Flatbreads

Flip flatbreads. Evenly spread on artichoke-cheese mixture and top with shallots, then shredded cheese. Sheet will be hot! Use a utensil/caution.

Bake in hot oven until flatbread edges are crispy and cheese is melted, 6-8 minutes.

    Carefully remove from oven.

    While flatbreads bake, continue recipe.

  5. 5

    Dress Arugula and Finish Dish

In another mixing bowl, combine arugula, lemon juice (to taste), 1/2 tsp. olive oil, and a pinch of pepper. Gently toss to dress arugula.

Plate dish as pictured on front of card, topping flatbread with arugula. Quarter flatbread, if desired. Bon appétit!
