2 Start the Peppers
Place bell peppers, cut-side down, on prepared baking sheet. Top with 1 tsp. olive oil. Massage oil into peppers.
Roast in hot oven until slightly tender, 13-15 minutes. While peppers roast, continue recipe. -
3 Cook the Filling
Place a large non-stick pan over medium-high heat and add 2 tsp. olive oil.
Add ground turkey to hot pan. Break up meat until no pink remains and turkey reaches a minimum internal temperature of 165 degrees, 6-8 minutes.Add tomatoes and shallots. Stir occasionally until softened, 2-3 minutes.Add tomato sauce, Italian seasoning, garlic salt, and 1/4 tsp. pepper. Stir often until slightly thickened, 2-3 minutes.Stir in Parmesan and half the mozzarella (reserve remaining for topping) until melted, 1-2 minutes. If too thick, add water, 1 Tbsp. at a time, until desired consistency is reached. Remove from burner. -
4 Stuff the Peppers
Carefully remove baking sheet from oven. Flip peppers cut-side up. Baking sheet will be hot! Use a utensil.
Evenly distribute filling between pepper halves. Top evenly with panko and remaining mozzarella. If peppers are too large to fill completely, fill 4 halves and roast 3-4 minutes longer. Remaining pepper is yours to use as you please! -
5 Finish Peppers and Finish Dish
Roast peppers again in hot oven until cheese is melted and lightly browned and peppers are tender, 9-11 minutes.
Carefully remove from oven. Turn broiler on.Once broiler is fully heated, broil under hot broiler until panko is toasted and cheese is bubbling, 1-2 minutes.Don't text and broil!
