Cooking Guidelines
To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:

If using ground beef, add to a medium non-stick pan over medium heat. Break up until beef reaches minimum internal temperature, 4-6 minutes.

1 Start the Turkey and Peppers
Place mixed peppers in one provided tray. Toss with 1 tsp. olive oil and garlic salt. Spread into an even layer.
In second provided tray, combine ground turkey, chile and cumin rub, and 1/4 tsp. salt. Break up turkey into bite-sized pieces and spread into a single layer. Evenly top with 1 tsp. olive oil.Bake both trays uncovered in hot oven, 10 minutes.Turkey will finish cooking in a later step.While peppers and turkey bake, continue recipe. -
2 Make the Cornbread Topping and Filling
In a mixing bowl, combine corn muffin mix, corn, 1/2 cup water, and cheese. Stir until mixture reaches the consistency of pancake batter. If too thick, add additional water, 1 Tbsp. at a time, until desired consistency is reached.
After 10 minutes, carefully remove trays from oven and drain any excess liquid from turkey tray. Tray will be hot! Use caution.Transfer peppers to turkey tray and stir to combine. Trays will be hot! Use a utensil.Stir enchilada sauce (use less if spice-averse), tomatoes, and 1/4 tsp. salt into tray with turkey-pepper mixture. Transfer half the turkey-pepper mixture to empty tray and spread into a single layer. Trays will be hot! Use a utensil. -
3 Finish the Meal
Evenly top both trays with corn muffin mixture. To create snowman figure, portion out 1/3 cup, 1/4 cup, then 1 Tbsp. corn muffin mixture on a parchment-lined baking sheet, close together, starting from largest to smallest. Spread out each portion until flat. Bake same time as filling. Carefully remove from oven and top filling with snowman figure.
Bake both trays uncovered in hot oven until corn muffin mixture is golden-brown, peppers are tender, and turkey reaches a minimum internal temperature of 165 degrees, 20-25 minutes.Carefully remove from oven.To serve, top tamale pie with crema. Bon appétit!
