To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:

If using antibiotic free chicken breasts, follow same instructions.

1 Prepare the Ingredients
Peel apple, quarter, and remove core. Cut into 1/2" dice.
Mince walnuts.In a mixing bowl, combine panko and walnuts. Set aside. -
2 Prepare the Chicken
Pat chicken dry. Season both sides with 1/4 tsp. salt and a pinch of pepper.
Evenly spread half the mustard (to taste; reserve remaining for sauce) on one side of chicken, then evenly top with walnut-panko mixture, pressing gently to adhere. -
3 Roast the Chicken and Apples
Place chicken, walnut-panko-side up, on one side of prepared baking sheet. Spray chicken with cooking spray and evenly top with 2 tsp. olive oil.
Place apples on empty side of baking sheet and toss with 1 tsp. olive oil and a pinch of salt.Roast in hot oven until apples are tender and chicken reaches a minimum internal temperature of 165 degrees, 15-20 minutes.Carefully remove from oven.While chicken and apples roast, continue recipe. -
4 Make the Sauce
Place a small non-stick pan over medium-high heat.
Add cherry jam, balsamic vinegar (to taste), 2 Tbsp. water, and a pinch of salt to hot pan. Stir to combine and bring to a simmer.Once simmering, remove from burner. Transfer sauce to a heat-safe mixing bowl and stir in remaining mustard (to taste) until combined. Let cool, 10 minutes.After 10 minutes, stir in 2 tsp. olive oil until combined. Set aside.If too thick, add additional water, 1 tsp. at a time, until desired consistency is reached. -
5 Finish the Dish
Plate dish as pictured on front of card, topping spinach with apples and goat cheese (crumbling, if necessary). Top spinach salad with chicken and garnish chicken with sauce. Bon appétit!
