- 1 Mixing Bowl

Cooking Guidelines
To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:
- Steak and Pork 145° F (rest cooked meat, 3 minutes) |
- Seafood 145° F |
- Chicken 165° F |
- Ground Beef 160° F |
- Ground Turkey 165° F |
- Ground Pork 160° F

If using antibiotic free chicken, pat dry. Cook until chicken reaches minimum internal temperature, 5-7 minutes per side.

1 Cook the Chicken
Pat chicken dry and season both sides with adobo seasoning.
Place a large non-stick pan over medium heat and add 2 tsp. olive oil.Add chicken to hot pan. Cook until browned and chicken reaches a minimum internal temperature of 165 degrees, 3-5 minutes per side.Cutlet thickness can vary; if you receive a thinner cutlet, we recommend checking for doneness sooner.Remove from burner. Let cool, 5 minutes.While chicken cooks, continue recipe. -
2 Prepare the Ingredients
Drain and rinse beans in a colander/strainer.
Coarsely chop cilantro. -
3 Make the Filling
Once cool enough to handle, transfer chicken to a clean, flat work surface and coarsely chop or shred into bite-sized pieces.
In a mixing bowl, combine chicken, beans, corn, fiesta seasoning, and 1/4 the cheese (reserve remaining for enchiladas). -
4 Assemble the Enchiladas
Evenly spread 1/4 the enchilada sauce (to taste; reserve remaining for topping) over bottom of prepared casserole dish. Kids not a fan of extra heat? Feel free to skip/reduce the enchilada sauce.
Place tortillas on a clean work surface. Evenly divide filling between tortillas. Tuck one tortilla end under filling and roll tightly. Place side-by-side in casserole dish, seam-side down.Make dinnertime fun! With supervision, have your kid(s) help assemble the enchiladas. -
5 Bake Enchiladas and Finish Dish
Evenly top enchiladas with remaining enchilada sauce (to taste) and remaining cheese. Cover with foil. Kids not a fan of extra heat? Feel free to skip/reduce the enchilada sauce.
Bake covered in hot oven, 10 minutes.Carefully remove from oven. Remove foil. Casserole dish will be hot! Use caution.Bake again uncovered in hot oven until cheese and sauce are bubbling, 5-8 minutes.Carefully remove from oven.Plate dish as pictured on front of card, topping enchiladas with sour cream and cilantro. Bon appétit!
