Cooking Guidelines
To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:
- Steak and Pork 145° F (rest cooked meat, 3 minutes) |

Meatlovers! If using protein, cook in a medium non-stick pan over medium heat with 1 tsp. olive oil.

If using diced chicken breasts, pat dry. Stir occasionally until chicken reaches minimum internal temperature, 5-7 minutes.

If using petite scallops, pat dry. Let oil in pan heat, 3 minutes. After 3 minutes, cook undisturbed, 90 seconds. After 90 seconds, stir occasionally until scallops reach minimum internal temperature, 60-90 seconds. Scallops will vary in amount as they are portioned by weight. Don't worry, the sweet flavor and tender texture will be the same.

If using shrimp, pat dry. Cook until pink and shrimp reach minimum internal temperature, 2-3 minutes per side.

If using steak strips, pat dry, coarsely chop, then separate pieces. Stir occasionally until steak reaches minimum internal temperature, 4-6 minutes. Rest, 3 minutes.

Add protein to meal as desired.

1 Cook the Carrots
Place a medium pot over medium heat and add 2 tsp. olive oil.
Add carrots to hot pot. Stir often until slightly browned, 2-4 minutes.While carrots cook, continue recipe. -
2 Add the Mushrooms and Bok Choy
Remove any discolored outer leaves from bok choy and trim ends. Cut into 1/2" strips.
Trim and thinly slice green onions, keeping white and green portions separate.Add white portions of green onions, mushrooms, bok choy, 1/4 tsp. salt, and a pinch of pepper to hot pot.Stir occasionally until mushrooms and bok choy are tender, 2-3 minutes. -
3 Add the Broth
Add 3 cups water, soy sauce, and pho base to hot pot. Stir to combine and bring to a simmer.
Once simmering, stir occasionally until carrots are tender, 4-6 minutes.Remove from burner.While soup simmers, continue recipe. -
4 Heat Noodles and Finis Dish
Place noodles in a microwave-safe bowl and cover with a damp paper towel.
Microwave covered until heated through, 1-2 minutes.While noodles microwave, stem cilantro and reserve whole leaves.Carefully remove from microwave.Plate dish as pictured on front of card, pouring soup over noodles and garnishing with cilantro, green portions of green onions, and wontons.
