Cooking Guidelines

To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:

  • Steak and Pork 145° F (rest cooked meat, 3 minutes) |
  • Seafood 145° F |
  • Chicken 165° F |
  • Ground Beef 160° F |
  • Ground Turkey 165° F |
  • Ground Pork 160° F

    prep

    mince garlic

    slice and separate green onions

    juice lime

    strain beans, do not rinse

    arepa dough

    combine arepa mix, 2/3 c water and 1/2 cotija, with pinch of salt combine until thick dough is formed

    split into 4 even balls and press each into a disk abotu 2-3 inches in diameter

    cooking beans

    small pot, 1 t oil, medium heat, add onion bottoms and garlic

    cook 1 minute, season fajita and add beans

    1/2 c water, reduce to medium low and simmer covered for 8-10

    once cooked, some liquid should remain, add butter and mash, should still be chunky

    cooking arepas

    large non stick, medium high heat 1 T oil

    place in pan cook 2-3 minutes per side, slightly golden brown

    remove from pan to plate

    return pan to heat no need to wipe

    cooking pork and assemble

    1 t oil in pan, add pork cook 3 minutes, stir cook another 3-4 minutes, breaking up with a spoon, add enchilada sauce and 1 T water, remove from heat and plate

    top arepas with pork mix, remaining cheese and green onion tops
