A note about serious food allergies

We're giving the mighty steak a lot of love in this meal. (Not that it needs it; steak is both juicy delicious and meaty good.) There's an apple butter demi spooned on top, with a sweet earthy richness that brings out the succulent best notes. But that's not the only part we've got love for; potatoes are given a herbaceous boost with rosemary topping and those tiny green cabbages, Brussels, are getting both cheese and bacon as accouterments. All is full of love.

Cooking Guidelines

To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:

  • Steak and Pork 145° F (rest cooked meat, 3 minutes) |
  • Seafood 145° F |
  • Chicken 165° F |
  • Ground Beef 160° F |
  • Ground Turkey 165° F |
  • Ground Pork 160° F

Customize It Instructions

  • If using chicken breasts, follow same instructions as sirloin in Steps 1 and 3, cooking until chicken reaches minimum internal temperature, 5-7 minutes per side.

  • If using pork medallions, follow same instructions as sirloin in Steps 1 and 3, cooking until pork reaches a minimum internal temperature of 145 degrees, 3-5 minutes per side. Rest, 3 minutes. Medallion thickness can vary; if you receive a thinner medallion, we recommend checking for doneness sooner.

  • If using filets mignon, follow same instructions as sirloin in Steps 1 and 3, cooking until browned and steaks reach a minimum internal temperature of 145 degrees, 4-6 minutes per side. Rest, 3 minutes.

    Prepare the Ingredients

    Cut potatoes into 1/2" dice.

    Trim stems off Brussels sprouts and halve vertically (quarter if larger than a ping-pong ball).

    Stem and mince rosemary.

    Pat steaks dry, and season both sides with a pinch of salt and pepper.

    Roast the Vegetables

    Place potatoes on prepared baking sheet and toss with 1 tsp. olive oil, rosemary, and a 1/4 tsp. salt. Massage oil, rosemary, and salt into potatoes. Spread into a single layer on one half.

    Place Brussels sprouts on empty half and toss with 1 tsp. olive oil, garlic salt, and a pinch of pepper. Massage oil, garlic salt, and pepper into Brussels sprouts. Spread into a single layer on their half, cut side down.

    Roast in hot oven until tender and browned, 20-25 minutes.

    Carefully remove from oven. Turn broiler on.

    Cook the Steaks

    When vegetables have 10 minutes left to cook, place a medium non-stick pan over medium heat and add 2 tsp. olive oil.

    Add steaks to hot pan and cook until steak reaches desired doneness, or 4-6 minutes per side for medium/medium-well.

    Steak thickness can vary; if you receive a thinner steak, we recommend checking for doneness sooner.

    Remove from burner. Remove steaks to a plate and tent with foil. Rest, 3 minutes.

    Wipe pan clean and reserve.

    Crisp Bacon and Make Sauce

    Return pan used to cook steaks to medium-high heat.

    Add bacon to hot, dry pan. Stir occasionally until crispy, 2-4 minutes.

    Remove bacon to a plate. Keep pan on burner and lower heat to medium.

    Add demi-glace, apple butter, and 1 Tbsp. water to hot, dry pan. Stir to combine, then bring to a simmer.

    Once simmering, remove from burner and stir in butter.

    Finish Brussels Sprouts and Finish Dish

    Top roasted Brussels sprouts evenly with cheese and bacon.

    Place baking sheet under hot broiler and broil until cheese is melted, 1-2 minutes.

    Don't text and broil! Keep eye on broiler as cheese may burn easily.

    Plate dish as pictured on front of card, slicing steak if desired, and topping steak with sauce. Bon appétit!
