Cooking Guidelines

To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:

    Microwave Instructions

    Thoroughly rinse any fresh produce and pat dry. Drain chicken and pat dry.

    In provided tray, combine potatoes, broccoli, garlic salt, and 1 Tbsp. water.

    Cover tray with a damp paper towel. Microwave until vegetables are tender, 3-4 minutes.

    While vegetables cook, in a mixing bowl, combine pesto, mayonnaise, and half the Parmesan (reserve remaining for garnish).

    Carefully remove tray from microwave. Push vegetables to one side of tray. Place chicken in now-empty side and top evenly with pesto mixture.

    Cover tray with a damp paper towel. Microwave until chicken is heated through, 4-5 minutes.

    Carefully remove from microwave and top vegetables with mozzarella. Rest until cheese melts, 2-3 minutes.

    To serve, top chicken with remaining Parmesan and balsamic fig glaze and garnish vegetables with red pepper flakes (to taste). Bon appétit!

    Oven Instructions

    Set oven rack to middle position. Turn oven on to 375 degrees. Let preheat, at least 10 minutes. Thoroughly rinse any fresh produce and pat dry. Prepare a baking sheet with foil. Drain chicken and pat dry.

    In provided tray, combine potatoes, broccoli, garlic salt, and 1 Tbsp. water.

    Cover tray with foil and place on prepared baking sheet. Bake (on middle rack) covered in hot oven until vegetables are tender, 15-20 minutes.

    While vegetables cook, in a mixing bowl, combine pesto, mayonnaise, and half the Parmesan (reserve remaining for garnish).

    Carefully remove tray from oven. Push vegetables to one side of tray. Place chicken in now-empty side and top evenly with pesto mixture.

    Cover tray with foil and place on prepared baking sheet. Bake (on middle rack) again covered in hot oven until chicken is heated through, 15-17 minutes.

    Carefully remove from oven and top vegetables with mozzarella. Rest until cheese melts, 2-3 minutes.
