Cooking Guidelines
To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:
- Steak and Pork 145° F (rest cooked meat, 3 minutes) |

- Ground Turkey 165° F |
- Ground Pork 160° F

1 Bake the Filling
Turn oven on to 425 degrees. Let preheat, at least 10 minutes. Thoroughly rinse any fresh produce and pat dry. Spray provided trays with cooking spray.
Pat chicken dry. Divide evenly between both prepared provided trays. Spread into a single layer. Season all over with fajita seasoning.Top chicken with peppers, dividing evenly between both trays. Top each tray with 1 tsp. olive oil and a pinch of salt. Bake both trays uncovered in hot oven until chicken reaches a minimum internal temperature of 165 degrees, 20-22 minutes.While filling bakes, continue recipe. -
2 Make the Salsa and Crema
Drain beans.
Place corn in a microwave-safe bowl. Microwave until heated through, 30-45 seconds.Add pesto (to taste), beans, and a pinch of salt to bowl with corn. Stir to combine. Set aside.In a mixing bowl, combine 2 tsp. water and sour cream. -
3 Heat Tortillas and Assemble Tacos
Carefully remove trays from oven. Drain excess liquid. Trays will be hot! Use an oven mitt.
Combine filling from both trays into one tray. Add BBQ sauce and stir to coat.Wrap tortillas in a damp paper towel and microwave until warmed, 30-60 seconds.If tortillas come folded, keep folded.Divide cheese evenly amongst tortillas, placing in center. Top with filling.To serve, garnish with salsa and crema. Bon appétit!
