Cooking Guidelines
To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:

If using ground turkey, bake uncovered in hot oven until meatballs reach minimum internal temperature, 22-25 minutes.

1 Prepare the Potatoes
Prick potatoes all over with a fork.
Place potatoes and 1 Tbsp. water in a microwave-safe bowl. Cover with a damp paper towel.Microwave covered until slightly tender, 5-7 minutes.If you receive potatoes larger than 2”, they may need an extra 1-2 minutes in the microwave to soften. Carefully remove from microwave and transfer to a clean, flat work surface. Using the flat side of an object, press down gently to smash each potato until 1/2" thick. Potatoes will be hot! Use caution. Wipe bowl clean and reserve.Place smashed potatoes, 2 tsp. olive oil, 1/4 the onion salt (reserve remaining for meatballs and corn), and a pinch of pepper in one provided tray. Stir to combine and spread into an even layer. -
2 Form the Meatballs
In a mixing bowl, combine panko and half the dressing (reserve remaining for garnish). Let sit, 1 minute.
After 1 minute, stir in ground beef, half the remaining onion salt (reserve remaining for corn), and a pinch of pepper until completely combined. Form mixture into 16 equally-sized meatballs and place in second provided tray. -
3 Bake Meal, Crisp Bacon, and Heat Corn
Bake both trays uncovered in hot oven until potatoes are golden-brown and meatballs reach a minimum internal temperature of 160 degrees, 20-25 minutes.
While meal bakes, line a microwave-safe plate with a paper towel. Spread bacon evenly on towel-lined plate. Microwave until crispy, 30-60 seconds.Place corn, butter, remaining onion salt, and a pinch of pepper in reserved microwave-safe bowl. Microwave uncovered until butter is melted, 3-4 minutes.Carefully remove from microwave. Stir to combine and set aside.Carefully remove trays from oven. Evenly top meatballs with cheese. Bake meatballs again uncovered in hot oven until cheese is melted, 2-3 minutes.Carefully remove from oven.To serve, top meatballs with remaining dressing and garnish potatoes with crispy bacon and sour cream.
