Cooking Guidelines
To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:
- Steak and Pork 145° F (rest cooked meat, 3 minutes) |

- Ground Turkey 165° F |

If using ground turkey, cook in a medium non-stick pan with 2 tsp. olive oil over medium heat. Break up until turkey reaches minimum internal temperature, 6-8 minutes.

1 Prepare Beans and Start Beef Mixture
Drain and rinse beans in a colander/strainer.
In provided tray, combine ground beef and poblanos (use less if spice-averse). Spread into an even layer, then drizzle with 1 tsp. olive oil.Bake uncovered in hot oven, 12 minutes.Beef will finish cooking in a later step.Carefully remove from oven and drain any excess grease from tray. Tray will be hot! Use caution.While beef mixture bakes, continue recipe. -
2 Add the Cornbread Topping
In a mixing bowl, combine corn muffin mix, corn, 1/4 cup water, and half the cheese (reserve remaining for topping).
Stir until combined and mixture reaches the consistency of pancake batter. If too thick, add additional water, 1 Tbsp. at a time, until desired consistency is reached.Add tomato sauce, chicken base, beans, taco seasoning, and 1/2 cup water to tray with beef mixture. Stir to combine and spread into an even layer.Evenly dollop cornbread batter on top, then evenly top with remaining cheese. -
3 Finish the Meal
Bake uncovered in hot oven until cornbread topping is golden-brown and firm and beef reaches a minimum internal temperature of 160 degrees, 20-25 minutes.
Carefully remove from oven.To serve, top with sour cream. Bon appétit!
