Cooking Guidelines
To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:
- Steak and Pork 145° F (rest cooked meat, 3 minutes) |

1 Make the Meatballs
Turn oven on to 425 degrees. Let preheat, at least 10 minutes. Thoroughly rinse any fresh produce and pat dry. Spray both provided trays with cooking spray.
In a mixing bowl, combine 2 Tbsp. water and panko. Let rest, 1 minute.After 1 minute, add ground beef, chimichurri seasoning, 1/4 tsp. salt, and a pinch of pepper to bowl with panko and thoroughly combine. Form into 16 evenly-sized meatballs.Evenly space eight meatballs in each prepared tray. Top with 1 tsp. olive oil. -
2 Add the Vegetables
Prick tomatoes with a fork.
Divide tomatoes and peppers and onions evenly between trays. Top with 1 tsp. olive oil, 1/4 tsp. salt, and a pinch of pepper. -
3 Bake the Meal
Wrap flatbreads in foil.
Bake flatbreads (wrapped) and both trays (uncovered) in hot oven until vegetables are tender, tomatoes begin to release their juices, and meatballs reach a minimum internal temperature of 160 degrees, 10-15 minutes.While meal bakes, combine sour cream, tzatziki, and a pinch of salt in another mixing bowl.Carefully remove flatbreads and trays from oven. Gently stir meatballs and vegetables to combine.To serve, fill flatbreads with meatballs and vegetables and garnish with sauce. Bon appétit!
