Before You Cook
Cooking Guidelines
To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:
- Steak and Pork 145° F (rest cooked meat, 3 minutes) |

Form the Meatballs
Turn oven on to 425 degrees. Let preheat, at least 10 minutes. Remove all produce from any packaging or constraints, then thoroughly rinse and pat dry. Spray both provided trays with cooking spray.
In a mixing bowl, combine 2 Tbsp. water and panko. Let rest, 1 minute.After 1 minute, add ground beef, chimichurri seasoning, 1/4 tsp. salt, and a pinch of pepper. Mix until completely combined. Form into 16 evenly-sized meatballs.Evenly space eight meatballs in each prepared tray. Top with 1 tsp. olive oil. -
Add the Vegetables
Prick tomatoes with a fork.
Divide tomatoes, pepper and onion mix, 1 tsp. olive oil, 1/4 tsp. salt, and a pinch of pepper evenly between both trays. -
Bake Meal and Toast Flatbreads
Wrap flatbreads in foil.
Bake flatbreads (wrapped) and both trays (uncovered) in hot oven until vegetables are tender and meatballs reach a minimum internal temperature of 160 degrees, 10-15 minutes.While meal bakes, combine sour cream, tzatziki dip, and a pinch of salt in another mixing bowl.Carefully remove flatbreads and trays from oven. Gently stir meatballs and vegetables to combine.To serve, fill flatbreads with meatballs and vegetables and top with tzatziki mixture. Bon appétit!
