Cooking Guidelines
To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:
- Steak and Pork 145° F (rest cooked meat, 3 minutes) |

- Ground Turkey 165° F |

If using antibiotic free chicken, pat dry. Cook until chicken reaches minimum internal temperature, 5-7 minutes per side.

If using filets mignon, follow same instructions.

1 Roast the Steak Frites
Cut potatoes into 1/2"-thick wedges and pat dry.
Place wedges on one prepared baking sheet and toss with 2 tsp. olive oil, garlic salt, and a pinch of pepper. Spread into an even layer.Roast in hot oven until slightly browned, 25-30 minutes, tossing once halfway through.Carefully remove from oven.While steak frites roast, continue recipe. -
2 Prepare Ingredients and Make Garlic Pepper Crema
Peel and halve shallot. Slice thinly.
In a mixing bowl, combine garlic pepper, creme fraiche, mayonnaise, and a pinch of salt. Set aside.Pat steaks dry and season both sides with steak seasoning and 1/4 tsp. pepper. -
3 Cook and Slice the Steaks
Place a medium non-stick pan over medium heat and add 2 tsp. olive oil.
Add steaks to hot pan. Cook until steaks reach desired doneness, or 4-6 minutes per side for medium/medium-well.Steak thickness can vary; if you receive a thinner steak, we recommend checking for doneness sooner.Remove from burner. Transfer steaks to a clean, flat work surface. Rest, 3 minutes. Once cool enough to handle, cut into 1/2" slices.While steaks cook, continue recipe. -
4 Cook the Shallots
Line a plate with a paper towel.
Place a small non-stick pan over medium heat and add 3 Tbsp. olive oil.Add shallots to hot pan. Stir occasionally until golden-brown, 2-3 minutes.Remove from burner. Transfer shallots to towel-lined plate and season with a pinch of salt. -
5 Toast Melts and Finish Dish
Separate ciabattas.
Place ciabattas, cut-side up, on second prepared baking sheet. Evenly top bottom halves with steak, then cheese.Toast in hot oven until ciabattas are browned and cheese is melted, 3-4 minutes.Carefully remove from oven.Plate dish as pictured on front of card, topping cheese with shallots, arugula, crema, then top ciabatta half.
