Cooking Guidelines

To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:

    Prepare The Ingredients

    Cut sweet potato into 1/2" thick fries

    Core tomato and cut into 1/2" rounds

    Roast The Sweet Potatoes

    Place sweet potato fries on prepared baking sheet and toss with 2 tsp. olive oil, ¼ tsp. salt and a pinch of pepper. Spread into a single layer, and roast in hot oven until browned and tender, 28-33 minutes, flipping once after 15 minutes. Rest 5 minutes on baking sheet to firm up.

    While potatoes roast, prepare the patties.

    Prepare The Patties

    Add black beans, quinoa, panko, 1/4 tsp salt and a pinch of pepper to a mixing bowl. Mash until thoroughly combined and pliable and form evenly into 2 patties.

    In a large non-stick pan over medium heat, add 6 tsp olive oil. Add patties to hot pan and cook until browned and slightly crispy, 4-5 minutes per side.

    Transfer patties to a plate. Reserve pan; no need to wipe clean.

    Toast The Buns

    Add buns cut side to hot pan until lightly toasted, 1-2 minutes.

    Make The Aioli and Finish The Dish

    Add seasoning blend and mayo to a bowl until completely combined.

    Evenly spread aioli on bottom buns. Top with patty and arugula.
