Prepare The Ingredients and Roast The Potatoes
Core tomato and cut into 1/2" rounds
Cut each potato into six to eight wedges.Place potatoes on prepared baking sheet and toss with 2 tsp. olive oil, 1/4 tsp salt and a pinch of pepper. Spread into a single layer and roast in hot oven until potatoes are tender and browned, 22-25 minutes.While potatoes roast, prepare the salmon. -
Cook The Salmon
Pat salmon fillets dry, and season flesh side with a pinch of salt and pepper.
"Place a medium non-stick pan over medium heat and add 1 tsp. olive oil.Add salmon, skin side up, to hot pan and sear until golden brown and salmon reaches a minimum internal temperature of 145 degrees, 4-6 minutes per side."Transfer to a bowl. Remove skin and gently flake into large chunks. Set aside.While salmon cooks, cook the vegetables. -
Cook The Vegetables
In the same pan over medium heat, add 1 tsp olive oil and carrot blend and cook, stirring occasionally, until tender, 4-5 minutes. Add bacon and cook 1 minute. Transfer to bowl with salmon and add mayo and seasoning blend and toss to combine.

Toast The Buns
Add buns cut side down to pan until lightly toasted, 1-2 minutes.
