To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:
- Steak and Pork 145° F (rest cooked meat, 3 minutes) |

If using ground beef, roast until logs reach minimum internal temperature, 17-20 minutes.

1 Form the Sausage Logs
Evenly divide Italian sausage into four evenly-sized meatballs.
Form meatballs into 5" logs. -
2 Prepare the Sausage Rolls
Remove puff pastry from refrigerator. Remove any paper between puff pastry squares, if necessary. If paper is sticking, place puff pastry in freezer until firm, 5 minutes.
Place sausage log in center of puff pastry square, like a hot dog. Fold puff pastry in half over sausage and gently press edges with a fork. Sausage will stick out of ends.Using the tip of a knife, draw diagonal lines on pastry, about 1/2" apart. Do not cut all the way through pastry. -
3 Bake the Sausage Rolls
Place sausage rolls on prepared baking sheet.
Bake in hot oven until sausage reaches a minimum internal temperature of 160 degrees, 15-20 minutes.Carefully remove from oven. Rest, 3 minutes.While sausage rolls bake, continue recipe. -
4 Cook the Peas
Place a medium non-stick pan over medium heat and add 1 tsp. olive oil.
Add peas and lemon n herb seasoning to hot pan. Stir occasionally until peas are heated through, 2-3 minutes.Remove from burner. Stir in 1/2 Tbsp. softened salted butter until melted and combined.While peas cook, continue recipe. -
5 Heat Mashed Potatoes, Make Sauce, and Finish Dish
In a microwave-safe bowl, combine mashed potatoes and 1/4 tsp. salt. Vigorously stir to combine.
Microwave uncovered until heated through, 2-3 minutes.Carefully remove from microwave and vigorously stir to combine.In another microwave-safe bowl, combine creme fraiche, mushroom base, mustard (to taste), a pinch of pepper, and 2 Tbsp. water. Microwave uncovered until heated through, 45-60 seconds.Carefully remove from microwave.Plate dish as pictured on front of card. Bon appétit!
