Combine potatoes, 1 tsp. olive oil, seasoning blend, and a pinch of pepper in provided tray. Spread into a single layer.
Bake uncovered in hot oven, 10 minutes.
Add the Pork
Carefully remove tray from oven. Push potatoes to one side and top with cheese. Tray will be hot! Use a utensil.
Add pulled pork and half the BBQ sauce (reserve remaining for after baking) to empty side of tray. Stir to combine.
Bake the Meal
Bake uncovered in hot oven until pork is heated through and potatoes are tender, 15-17 minutes.
While meal bakes, taste dressing. (It's spicy!) Combine slaw mix and dressing in a mixing bowl.
When meal has 5 minutes left to bake, place buns directly on oven rack, cut side down, and bake until golden brown, 2-3 minutes.
Carefully remove tray and buns from oven. Stir remaining BBQ sauce into pork. Spread mayonnaise on bottom bun and top with pulled pork, slaw, and top bun. Bon appétit!
