Cooking Guidelines
To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:
- Steak and Pork 145° F (rest cooked meat, 3 minutes) |

If using pork chops, follow same instructions as chicken in Step 3, roasting until pork reaches minimum internal temperature, 12-14 minutes. Rest, 3 minutes. Pork chop thickness can vary; if you receive a thinner chop, we recommend checking for doneness sooner.

1 Start the Mashed Potatoes
Peel and cut potatoes into large evenly-sized chunks.
Bring a medium pot with potato chunks covered by water to a boil.Once boiling, cook until fork-tender, 14-18 minutes.Remove from burner. Reserve 1/2 cup potato cooking water. Drain potatoes in a colander and return to pot.While potatoes boil, continue recipe. -
2 Prepare the Ingredients
Mince chives.
In a mixing bowl, combine mayonnaise and 1 tsp. water. Set aside.Combine panko, cheese, and 1 tsp. olive oil on a plate. -
3 Cook the Chicken
Pat chicken dry and season both sides with 1/4 tsp. pepper and half the onion salt (reserve remaining for potatoes).
Place one side of chicken into mayonnaise mixture, then place onto panko-cheese mixture, pressing gently to adhere. Place chicken on prepared baking sheet, topping-side up, and roast in hot oven until chicken reaches a minimum internal temperature of 165 degrees, 15-20 minutes. -
4 Finish the Mashed Potatoes
Add sour cream, butter, remaining onion salt, a pinch of pepper, and 2 Tbsp. potato cooking water to pot with potatoes.
Mash until combined and smooth. If too thick, add additional potato cooking water, 1 Tbsp. at a time, until desired consistency is reached. Stir in half the chives (reserve remaining for garnish). -
5 Finish the Dish
Plate dish as pictured on front of card, topping mashed potatoes with crispy onions and remaining chives. Bon appétit!
