Ask any cartoon fat cat: Lasagna is one of the most delicious dinners around. But it’s a lot of work: layering all the noodles, making cheese mixtures, and monitoring it carefully in the oven, making sure it doesn't burn. We eliminated much of the work, but none of the flavor, in making this lasagna skillet. Fierce Italian sausage, healthy spinach, and two types of cheese are all mixed in with classic noodles and sauce, resulting in a skillet that's filling enough for the fattest cat around. (But don't give it to him… this is your dinner!)
Break noodles into 1" pieces.
Coarsely chop spinach.
Stem and mince oregano.
Remove sausage from casing.
Cook the Noodles
Place noodles in boiling water and cook until al dente, 8-10 minutes.
Drain noodles in a colander and set aside.
While noodles boil, cook sausage.
Cook the Sausage
Place a medium oven-safe pan over medium heat. You may also use a cast iron skillet.
Add 1 tsp. olive oil and sausage in hot pan. Stir often, breaking up with a spoon, until no pink remains, 4-5 minutes.
Transfer sausage to a plate.
Reserve pan; no need to wipe clean.
Make the Sauce
Return pan used to cook sausage to medium heat and add 1 tsp. olive oil.
Add spinach, garlic, half the oregano (reserve remaining for garnish), and a pinch of salt to hot pan. Stir constantly until spinach is wilted, 30-60 seconds.
Stir in marinara and remove from burner.
Broil the Skillet
Stir sausage and pasta into sauce. Top with mozzarella.
Place pan under broiler and broil until cheese is melted, 2-3 minutes.
Carefully, remove from oven.
Serve family-style, garnishing with Parmesan and remaining oregano. Bon appétit!
