Peperonata sounds like a fancy pepperoni, but not so! It is sweet peppers cooked in olive oil. (It can also be tomatoes, onion, garlic, and herbs, or served hot or cold.) Thus ends the dictionary portion of this meal description. Onto the flavors: peppers, onion, garlic, pesto, tomatoes… and delightful, rich delightful, rich tortellini mixed right in. Nothing fancy, nothing overwhelming, just plain delicious.

Meatlovers! If adding protein, pat dry, season with a pinch of salt and pepper, and cook with 1 tsp. olive oil in a large non-stick pan over medium-high heat. If using diced chicken breasts, stir occasionally until chicken reaches minimum internal temperature, 5-7 minutes. If using Impossible burger, break up burger until heated through, 4-6 minutes. If using flank steak, separate into a single layer and pat dry. Stir occasionally until no pink remains and steak reaches minimum internal temperature, 4-6 minutes. If using shrimp, cook until shrimp reach minimum internal temperature, 2-3 minutes per side. Add to pasta as desired.

1 Prepare the Ingredients
Stem, seed, remove ribs, and cut red bell pepper into 1/2" dice.
Halve and peel onion. Slice one half into thin strips. (Remaining half is yours to use as you please!)Mince garlic. -
2 Make the Sauce
Place a large non-stick pan over medium-high heat and add 2 tsp. olive oil. Add onion and red bell pepper to hot pan and stir occasionally until tender, 4-6 minutes.
Add half the garlic (reserve remaining for bread), garlic pepper, sugar, crushed tomatoes, pesto, 1/4 tsp. salt, and a pinch of pepper. Bring to a simmer.Once simmering, stir occasionally until combined, 2-3 minutes.Remove from burner.While sauce cooks, bake garlic bread. -
3 Bake the Garlic Bread
Separate French roll, if necessary.
Place French roll halves on prepared baking sheet, cut side up. Top evenly with 2 tsp. olive oil, remaining garlic, and half the cheese (reserve remaining for garnish).Bake in hot oven until cheese is melted and bread is golden-brown, 8-10 minutes.While garlic bread bakes, cook tortellini. -
4 Cook the Tortellini
Once water is boiling, add tortellini and cook until softened and heated through, 3-4 minutes.
Drain in a colander. Gently stir tortellini into pan with sauce until combined. -
5 Finish the Dish
Plate dish as pictured on front of card, garnishing tortellini with remaining cheese. Bon appétit!
