Everyone loves cheese, and everyone loves stuffing things with cheese. (Maybe not all things… not sure we're ready for a gummy worm stuffed with cheese, but you know some enterprising R&D chef is on it.) Meatloaf stuffed with cheese is just perfect; every bite gives a salty gooey surprise. Bring the cheese, except in our gummy worms, please.

Cooking Guidelines

To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:

  • Steak and Pork 145° F (rest cooked meat, 3 minutes) |
  • Seafood 145° F |
  • Chicken 165° F |
  • Ground Beef 160° F |
  • Ground Turkey 165° F |
  • Ground Pork 160° F

Customize It Instructions

  • If using 20 oz. ground beef, follow same instructions as 10 oz. ground beef, forming four loaves instead of two.

  • If using ground pork, follow same instructions as ground beef in Steps 1, 2 and 3, baking 14 minutes, adding broccoli, then baking again until loaves reach minimum internal temperature, 14-16 minutes.

    Prepare the Meatloaves

    Mince garlic.

    In a mixing bowl, combine half the ricotta (reserve remaining for meatloaf mix), mozzarella, and a pinch of salt and pepper.

    In another mixing bowl, combine ground beef, half the panko, (reserve remaining for broccoli), remaining ricotta, half the Italian seasoning (reserve remaining for sauce), 1/3 the garlic (reserve remaining for broccoli and sauce), and garlic salt.

    Form ground beef mixture into four thin, evenly-sized patties, about 1/4" thick. Place patties on a clean work surface. Divide cheese mixture between two patties, topping evenly. Top with remaining patties, and pinch edges to seal tightly into two evenly-sized meatloaves, about 1" thick and 21/2" long.

    Start Meatloaves and Prepare Broccoli

    Place meatloaves on one half of prepared baking sheet and top with 1 tsp. olive oil.

    Bake in hot oven, 12 minutes.

    While meatloaves bake, cut broccoli into bite-sized pieces.

    In another mixing bowl, combine broccoli, half the remaining garlic (reserve remaining for sauce), 2 tsp. olive oil, 1/4 tsp. salt, and a pinch of pepper until broccoli is coated.

    Finish Meatloaves and Cook Broccoli

    Carefully remove baking sheet from oven. Place broccoli on empty half in a single layer. Baking sheet will be hot! Use a utensil.

    Bake again in hot oven until broccoli is fork-tender and meatloaves reach a minimum internal temperature of 160 degrees, 14-16 minutes.

    While meatloaves and broccoli bake, continue recipe.

    Toast the Panko

    Place a medium non-stick pan over medium heat and add 1 tsp. olive oil.

    Add remaining panko and a pinch of salt to hot pan and stir until golden, 30-60 seconds.

    Remove from burner.

    Transfer panko to a plate or bowl. Reserve pan; no need to wipe clean.

    Make Sauce and Finish Dish

    Return pan used to toast panko to medium heat and add 1 tsp. olive oil.

    Add remaining garlic and remaining Italian seasoning to hot pan. Cook, 30 seconds.

    Stir in marinara, 2 Tbsp. water, and a pinch of salt and pepper until heated through and thoroughly combined, 1-2 minutes.

    Remove from burner.

    Plate dish as pictured on front of card, serving meatloaves (slicing, if desired) with sauce and garnishing broccoli with toasted panko. Bon appétit!
