Prepare The Ingredients
Preheat oven to 400 degrees. Remove lid and label, if necessary. When ingredient appears in recipe, remove from packaging.
Combine broccoli, 2 tsp olive oil, parmesan, ¼ tsp salt and a pinch of pepper in provided tray until completely combined. Spread into a single layer on one half.
Prepare The Meatballs
Combine ground pork, crushed saltine crackers, ¼ tsp. salt, and a pinch of pepper on tray lid. Divide mixture into six evenly-sized meatballs, about the size of golf balls. Place meatballs next to vegetables on bottom of tray.
Roast The Meatballs and Make The Sauce
Roast in a hot oven until broccoli is tender and meatballs have reached a minimum internal temperature of 145 degrees, 22-24 minutes.
Remove broccoli to a plate. Add dijon mustard, sour cherry jam and beef demi to the bottom of the pan. Stir to combine with a spoon.
