  1. 1

    Prepare the Ingredients

Trim ends off snow peas and cut into 1" pieces.

Trim and thinly slice green onions on an angle, keeping white and green portions separate.

Separate leaves of lettuce for cups.

Combine slaw mix and dressing in a mixing bowl. Set aside.

In another mixing bowl, combine peanut butter, sambal (to taste), soy sauce, and 1 Tbsp. water. Set aside.

Pat chicken dry, and season both sides with a pinch of pepper.

  2. 2

    Cook the Chicken

Place a medium non-stick pan over medium heat and add 1 tsp. olive oil.

Add chicken breasts to hot pan and cook until browned and chicken reaches a minimum internal temperature of 165 degrees, 5-7 minutes per side.

Remove chicken to another mixing bowl and cover with plastic wrap. Wipe pan clean and reserve.

  3. 3

    Cook the Snow Peas

Return pan used to cook chicken to medium heat and add 1 tsp. olive oil.

Add snow peas, white portions of green onions, and a pinch of salt and pepper to hot pan. Stir occasionally until peas are tender, 3-5 minutes.

    Remove from burner.

  4. 4

    Shred and Sauce the Chicken

Remove plastic from bowl with chicken. Shred into bite-sized pieces.

Add peanut butter-soy mixture and toss or gently combine until chicken is coated.

  5. 5

    Finish the Dish

Plate dish as pictured on front of card, filling lettuce cups with chicken and topping with slaw and green portions of green onions. Layer two lettuce leaves for extra crunch and structural support, if desired. Bon appétit!
