Cooking Guidelines

Prepare The Ingredients
Mince garlic
Cut mushrooms into 1/4" slices.Coarsely chop cauliflower florets. -
Make The Cauliflower Mash
Bring a medium pot with cauliflower, 3/4 cups water, and ¼ tsp. salt to a boil. Reduce heat to medium-high, and stir occasionally until water evaporates completely, 12-14 minutes. Make sure no water is left in pan; remaining water will make mash runny. Remove from burner and add sour cream, butter and garlic salt. Mash until mostly smooth. Stir in spinach until wilted. Cover and set aside. While cauliflower cooks, cook pork chicken.

Cook The Chicken
Place a medium non-stick pan over medium heat and add 1 tsp. olive oil. Add chicken breasts to hot pan, and cook until browned and chicken reaches a minimum internal temperature of 165 degrees, 5-7 minutes per side. Remove chicken to a plate and tent with foil. Remove from burner.
Reserve pan; wipe clean -
Make The Sauce
In the same pan over medium high heat, add 1 tsp olive oil and mushrooms. Stir occasionally until browned, 3-4 minutes.
Add garlic and cook 1 minute.Add cream cheese, 1/4 cup water and a pinch of salt and pepper. Stir to combine. Bring to a simmer. -
