To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:

Prepare the Ingredients
Preheat oven to 425 degrees. Thoroughly rinse any fresh produce and pat dry.
Combine sweet potatoes, fajita seasoning, 1 tsp. olive oil, and ¼ tsp. salt in provided tray. Massage oil and seasoning into potatoes and spread into a single layer.
Bake uncovered in hot oven, 20 minutes.
Prepare the Meatballs
Finely crush saltines.
Combine ground pork, crushed saltines, chimichurri seasoning, ⅓ the mayonnaise (reserve remaining for sauce), ¼ tsp. salt, and ¼ tsp. pepper in a mixing bowl. Form into six evenly-sized meatballs.
Carefully remove tray from oven. Push sweet potatoes to one side. Tray will be hot! Use a utensil. Top sweet potatoes with corn salad.
Place meatballs in empty space in tray.
Bake the Dish
Bake uncovered in hot oven until meatballs reach a minimum internal temperature of 160 degrees, 24-26 minutes.
While meatballs bake, combine dressing and remaining mayonnaise in another mixing bowl. Set aside.
Stem cilantro, reserving leaves whole.
Carefully remove tray from oven. Top meatballs with dressing-mayonnaise mixture. Top sweet potatoes and corn with cheese and cilantro leaves. Bon appétit!
