If using ground turkey, bake uncovered in hot oven until meatloaves reach minimum internal temperature, 20-25 minutes.

1 Start the Vegetables
Break broccoli into bite-sized pieces.
Drain potatoes in a colander/strainer.Combine broccoli, potatoes, 1 tsp. olive oil, and garlic salt in provided tray. Spread into a single layer.Bake uncovered in hot oven, 10 minutes.While vegetables bake, continue recipe. -
2 Add the Meatloaves
Finely crush crackers.
In a mixing bowl, combine ground beef, half the BBQ sauce (reserve remaining for topping), crackers, half the cheese (reserve remaining for vegetables), 1/4 tsp. salt, and a pinch of pepper. Form meat mixture into two equally-sized, oval-shaped loaves, about 3" in length and 2" by height.After 10 minutes, carefully remove tray from oven and push vegetables to one side of tray. Tray will be hot! Use a utensil.Place meatloaves in empty side of tray. -
3 Finish the Meal
In another mixing bowl, combine remaining BBQ sauce and chipotle pesto (to taste). Top meatloaves evenly with BBQ-chipotle mixture (use less if spice-averse).
Bake uncovered in hot oven, 15 minutes.Carefully remove tray from oven. Evenly top vegetables with remaining cheese.Bake again uncovered in hot oven until cheese is melted and meatloaves reach a minimum internal temperature of 160 degrees, 5-10 minutes.Carefully remove tray from oven.To serve, garnish meatloaf with crispy onions.
