If using cooked beef brisket, separate pieces. Bake covered in hot oven until brisket is heated through, 20-25 minutes.

1 Assemble the Pork and Plantains
Drain pulled pork and separate pieces.
Combine pork, half the chili powder (remaining is yours to use as you please!), half the salsa (to taste; reserve remaining for garnish), pesto (to taste), and a pinch of salt in provided tray. Push to one side.Add plantains to now-empty side of tray and evenly top with 1 tsp. olive oil.Cover pulled pork side of tray with foil. -
2 Bake the Pork and Plantains
Bake half-covered (pulled pork covered, plantains uncovered) in hot oven until plantains and pork are heated through, 15-20 minutes.
After 15-20 minutes, carefully remove from oven.While plantains and pork bake, continue recipe. -
3 Heat Rice and Beans and Finish Meal
Drain and rinse beans in a colander/strainer.
Carefully massage rice in bag to break up any clumps and remove from packaging.Place rice and beans in a microwave-safe bowl. Cover with a damp paper towel.Microwave covered until heated through, 2-3 minutes.Carefully remove from microwave. Stir in adobo seasoning until combined. Rest, 2 minutes. Fluff rice with a fork.To serve, top rice and beans with pork and plantains. Garnish with sour cream, remaining salsa (to taste), hot sauce (to taste), and cheese. Bon appétit!
