If using diced chicken thighs, pat dry. Cook in a medium non-stick pan with 2 tsp. olive oil over medium heat until chicken reaches minimum internal temperature, 5-7 minutes. Don't worry about trimming. Excess fat will render while cooking and add flavor.

If using steak strips, pat dry, coarsely chop,then separate pieces. Cook in a medium non-stick pan with 2 tsp. olive oil over medium heat until steak strips reach minimum internal temperature, 4-6 minutes. Rest, 3 minutes.

1 Start the Vegetables
Place pepper and onion mix in provided tray. Spread into a single layer.
Bake uncovered in hot oven, 8 minutes.While vegetables bake, continue recipe. -
2 Add Chicken and Bake Meal
Pat chicken dry and season all over with 1/4 tsp. salt and a pinch of pepper.
After 8 minutes, carefully remove tray from oven. Stir in chicken and 1 tsp. olive oil until combined. Spread into an even layer. Tray will be hot! Use a utensil.Bake uncovered in hot oven until vegetables are tender and chicken reaches a minimum internal temperature of 165 degrees, 20-25 minutes.Carefully remove from oven. Drain any excess liquid and stir in BBQ sauce until combined. Tray will be hot! Use a utensil.Evenly top chicken mixture with cheese. -
3 Toast Flatbreads, Assemble Slaw, and Finish Meal
Bake again uncovered in hot oven until cheese is melted, 3-5 minutes.
While cheese melts, place flatbreads directly on oven rack.Toast in hot oven until slightly browned, 2-3 minutes.Carefully remove flatbreads and tray from oven.While flatbreads toast, in a mixing bowl, combine slaw mix and dressing.To serve, fill flatbreads with chicken mixture and slaw.
