Meatlovers! If using protein, cook in a medium non-stick pan over medium heat with 1 tsp. olive oil.

If using antibiotic free chicken, pat dry. Cook until chicken reaches minimum internal temperature, 5-7 minutes per side.

If using filets mignon, pat dry. Cook until steak reaches desired doneness, or 4-6 minutes per side for medium/medium-well. Rest, 3 minutes. Steak thickness can vary; if you receive a thinner steak, we recommend checking for doneness sooner.

If using salmon, pat dry. Add salmon, skin-side up first, and cook until salmon reaches minimum internal temperature, 4-6 minutes per side.

1 Cook the Spinach
Place a large oven-safe pan over medium-high heat.
Add 3 cups water, cream base, and seasoned salt to hot pan. Stir to combine and bring to a simmer.Once simmering, add pasta and cook until al dente, 10-12 minutes.While pasta cooks, continue recipe. -
2 Cook Pasta and Prepare Spinach and Make Ricotta Topping
Coarsely chop spinach.
In a mixing bowl, combine ricotta, pesto, and a pinch of salt. Set aside. -
3 Add the Sauce and Pasta
Add spinach and minced garlic and parsley to hot pan. Stir until spinach is wilted, 1-2 minutes.
Add half the Asiago (reserve remaining for topping), and a pinch of pepper and stir until sauce is thickened, 2-3 minutes.Remove from burner. -
4 Broil Pasta and Finish Dish
Evenly top pasta with dollops of ricotta topping, then remaining Asiago, breadcrumbs, and red pepper flakes (to taste).
Transfer to hot broiler and broil until breadcrumbs are browned, 1-2 minutes.Don't text and broil! Keep an eye on oven as breadcrumbs may burn easily under broiler.Carefully remove from broiler. Pan handle will be hot! Use an oven mitt.Plate dish as pictured on front of card. Bon appétit!
