Start the Green Beans
Trim green beans, if necessary.
In provided tray, combine green beans, fiesta seasoning, and a pinch of salt. Spray with cooking spray. Massage cooking spray and seasonings into green beans.Bake uncovered in hot oven, 15 minutes.While green beans bake, continue recipe. -
Add the Meatloaves
In a mixing bowl, combine panko and 2 Tbsp. water. Let sit, 1 minute.
After 1 minute, add ground beef, sour cream, taco seasoning, 3/4 the pesto (use less if spice-averse; reserve remaining for sauce), and smoked paprika. Stir until combined. Form mixture into two equally-sized, oval-shaped loaves, about 3" in length and 2" by height.After 15 minutes, carefully remove tray from oven and drain any excess liquid. Push green beans to one side of tray. Tray will be hot! Use a utensil.Place meatloaves in now-empty side of tray. -
Bake Meal and Make Sauce
Bake uncovered in hot oven until green beans are tender and meatloaves reach a minimum internal temperature of 160 degrees, 20-25 minutes.
While meal bakes, in a microwave-safe bowl, combine cream cheese, 1/4 cup water, and remaining pesto (to taste).Microwave uncovered until cream cheese is melted, 30-60 seconds.Carefully remove from microwave. Stir in shredded cheese until melted and combined.Carefully remove tray from oven. Stir softened butter into green beans until melted and combined.To serve, garnish meatloaf with sauce (to taste).
