Cooking Guidelines
To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:

If using diced chicken breasts, pat dry. Stir occasionally until chicken reaches minimum internal temperature, 5-7 minutes.

If using ground beef, break up until beef reaches minimum internal temperature, 4-6 minutes.

1 Cook the Ground Turkey
Place a medium pot over medium-high heat and add 1 tsp. olive oil.
Add ground turkey, 1/4 tsp. salt, and a pinch of pepper to hot pot. Break up meat until no pink remains and turkey reaches a minimum internal temperature of 165 degrees, 5-7 minutes.While turkey cooks, continue recipe. -
2 Prepare the Ingredients
Core tomatoes and cut into 1/2" dice.
Drain and rinse beans. -
3 Start the Soup
Add tomatoes to hot pot and stir occasionally until tomatoes release juices, 2-3 minutes.
Add tomato puree, beans, and corn. Stir until combined, 30-60 seconds. -
4 Finish Soup and Finish Dish
Add cream cheese, enchilada sauce, a pinch of salt, and 1/2 cup water to hot pot. Stir to combine and bring to a simmer.
Once simmering, stir until cream cheese is melted and combined, 45-60 seconds.Remove from burner. Plate dish as pictured on front of card, garnishing with sour cream, shredded cheese, and tortilla strips. Bon appétit!
