If using shrimp, pat dry and season with a pinch of salt. Follow same instructions as mahi-mahi in Step 5, frying until shrimp brown and reach minimum internal temperature, 2-3 minutes per side.
If using chicken, pat dry, and, on a separate cutting board, cut into 1” strips. Season with a pinch of salt. Follow same instructions as mahi-mahi in Step 5, flipping occasionally until chicken browns and reaches minimum internal temperature, 5-8 minutes.
