Make the Grain Bowl
Refrigerate prosciutto and goat cheese until ready to use.
Thoroughly rinse produce and pat dry.Quarter apple and remove core. Cut into 1/2" dice.Mix wheatberries with 1 Tbsp. water in a microwave safe bowl. Cover with a damp paper towel. Microwave until warm, 2 minutes, stirring once halfway through.Microwave prosciutto until crisp, 2-3 minutes. Once prosciutto is cool enough to handle, break into bite-sized pieces.Place spring mix, apple, and wheatberries in a bowl and toss with mustard and dressing. Top with crispy prosciutto and goat cheese (breaking up with your hands if needed). Bon appétit!
