You Will Need
Prepare the Chocolate
In a medium microwave-safe mixing bowl, add chocolate, butter, and vanilla extract. In a small pot, combine cream and coffee extract and heat over medium heat to a simmer; do not let it come to a boil. Pour over chocolate mixture. Let sit 30 seconds and then stir to melt the chocolate. If chocolate does not melt entirely, you can carefully heat in microwave, in 20 second intervals, until it is completely melted.
Stir in sea salt. Cover chocolate and put in refrigerator 50 minutes to let it chill and set up. If it is still too soft to work with after allotted time, re-cover and chill another 20 minutes.
Roll the Tuffles
Make note of the temperature in your kitchen when working with the truffles as well as how warm your hands are. They will be easier to work with, and will melt less easily, the colder your surroundings and hands are. Put on disposable gloves included in your box. Roll chocolate between hands into balls; approximately 2 teaspoons each, or to your preferred size.
Put powdered sugar into a small bowl. One at a time, coat rounded truffles with powdered sugar and you’re done!
