Before You Cook
To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:

Prepare the Ingredients
Cut broccoli into bite-sized pieces.
Place a large non-stick pan over medium heat and add 2 tsp. olive oil. Add broccoli and half the garlic salt (reserve remaining for pork) to hot pan. Cover, and stir occasionally until tender, 6-8 minutes.
While broccoli cooks, prepare pork.
Start the Pork
Coarsely crush crackers.
Pat pork medallions dry, and season both sides with remaining garlic salt and a pinch of salt and pepper.
Place a medium non-stick pan over medium heat. Add butter to hot pan and let melt.
Once butter has melted, add pork medallions cook undisturbed until well-browned, 5-8 minutes per side.
Finish the Pork
Transfer to pork medallions to prepared baking sheet. Top evenly with Parmesan, seasoning blend, and crushed crackers.
Place baking sheet under hot broiler and broil until cheese is melted and pork reaches a minimum internal temperature of 145 degrees, 2-4 minutes.
Don't text and broil! Keep an eye on the pork while under broiler.
