A note about serious food allergies

We're going deep with the funk and the jam on this one, like a Grateful Dead-Funkadelic show that never happened in 1976. (But should have!) Slightly sweet fig is presented in jam form, the guitars and bass free-flowing together to top the burger in inspirational and improvisation. And the funk… what brings more funk than blue cheese? (Apologies, James Brown.) Enough pop references from fifty years ago, this burger is music to your tastebuds. Tip: Getting hip to the sticks: halve your potato, then place cut-side down. Slice lengthwise into 1/4" slices, then stack half the potato slices and cut again into 1/4" slices.

  1. 1

    Roast the Fries

Cut potatoes into 1/4"-thick fries and pat dry.

Place fries on prepared baking sheet and toss with 1 Tbsp. olive oil, garlic pepper, and 1/4 tsp. salt. Spread into a single layer.

Roast in hot oven until browned, 25-30 minutes, flipping once halfway through.

    While fries roast, continue recipe.

  2. 2

    Form the Patties

In a mixing bowl, combine ground beef, 1/4 tsp. salt, and a pinch of pepper.

Form mixture into two evenly-sized patties, about 5" in diameter.

  3. 3

    Cook the Patties

Place a large non-stick pan over medium-high heat.

Add patties to hot, dry pan. Cook until lightly charred and beef reaches a minimum internal temperature of 160 degrees, 4-6 minutes per side.

Remove from burner. Transfer burgers to a plate. Wipe pan clean and reserve.

  4. 4

    Toast the Buns

Return pan used to cook patties to medium-high heat.

Add buns, cut-side down, to hot, dry pan. Toast until golden-brown, 1-2 minutes.

    Remove from burner.

  5. 5

Make Blue Cheese Spread and Finish Dish

In another mixing bowl, combine blue cheese (to taste) and softened cream cheese and mash until a spreadable consistency forms.

Plate dish as pictured on front of card, topping bottom bun with blue cheese spread, patty, fig spread, arugula, and top bun. Serve garlic aioli on the side for dipping fries. Bon appétit!
