Cooking Guidelines
To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:

1 Start the Sweet Potatoes
Turn oven on to 425 degrees. Let preheat, at least 10 minutes. Thoroughly rinse any fresh produce and pat dry. Spray provided tray with cooking spray.
Add sweet potatoes and cheese to prepared provided tray and vigorously stir to combine. Spread into an even layer. Bake uncovered in hot oven, 5 minutes.While sweet potatoes bake, continue recipe. -
2 Sear the Pork
Pat pork medallions dry and season all over with garlic pepper. If you receive a whole tenderloin, pat dry, and on a separate cutting board, slice into medallions, 3/4"-thick.
Place a medium non-stick pan over medium heat and spray with cooking spray. Add pork medallions to hot pan. Sear until golden brown on one side, 2-3 minutes.Remove from burner. Pork will finish cooking in a later step.While pork sears, trim and thinly slice green onions, keeping white and green portions separate.Carefully remove sweet potatoes from oven. Push to one side of tray. Tray will be hot! Use a utensil.Transfer pork, seared-side up, to now-empty side of tray. Top with white portions of green onions and a pinch of pepper. -
3 Bake the Meal
Place biscuits directly on oven rack.
Bake biscuits and tray uncovered in hot oven until biscuits are warmed through and pork reaches a minimum internal temperature of 145 degrees, 5-7 minutes.Pork medallion thickness can vary; if you receive a thinner medallion, we recommend checking for doneness sooner.While meal bakes, in a microwave-safe bowl, combine mustard, demi-glace, and 2 tsp. water. Microwave until heated through, 30-60 seconds.Carefully remove bowl from microwave and tray from oven. Rest, 3 minutes.Vigorously stir butter into sweet potatoes to combine.To serve, top sweet potatoes with crispy onions and garnish pork with sauce and green portions of green onions. Bon appétit!
