If using antibiotic free chicken, pat dry. Add chicken to a medium non-stick pan with 2 tsp. olive oil over medium heat. Cook until chicken reaches minimum internal temperature, 5-7 minutes per side.

If using filets mignon or sirloin steaks, pat dry. Add steaks to a medium non-stick pan with 2 tsp. olive oil over medium heat. Cook until steak reaches desired doneness, or 4-6 minutes per side for medium/medium-well. Rest, 3 minutes. Steak thickness can vary; if you receive a thinner steak, we recommend checking for doneness sooner.

1 Prepare the Butternut Squash
In a microwave-safe bowl, combine 1 tsp. olive oil and butternut squash.
Microwave uncovered until tender, 5-8 minutes.Carefully remove from microwave.Transfer butternut squash to provided tray. Toss with garlic salt, a pinch of pepper, and Italian seasoning. Push butternut squash to one side of tray. Butternut squash will be hot! Use a utensil.Wipe bowl clean and reserve. -
2 Bake the Butternut Squash and Salmon
Pat salmon dry and season flesh side with lemon n herb seasoning.
Place salmon in empty side of tray and evenly top with 1 tsp. olive oil.Bake uncovered in hot oven until butternut squash is browned and salmon reaches a minimum internal temperature of 145 degrees, 10-15 minutes.Carefully remove from oven.While butternut squash and salmon bake, continue recipe. -
3 Heat Orzo, Make Crema, and Finish Meal
In reserved microwave-safe bowl, combine orzo, 1/4 cup water, and 1/4 tsp. salt. Cover with a damp paper towel.
Microwave covered until heated through, 2-3 minutes.Carefully remove from microwave. Stir in pesto, softened butter, and half the lemon juice (reserve remaining for crema) until combined. Set aside.In a mixing bowl, combine cheese, creme fraiche, remaining lemon juice, and 1 tsp. water.To serve, top salmon with crema. Bon appétit!
