To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:

cut tomato into 4 pedals lengthwise and then into ¼ inch pieces
cut cucumber in ½ lengthwise and slice into half moons ¼ inch thick
dice chicken ½ inch pieces, if not using pre diced

remove from pan, add 2 t olive oil heat to medium high add chicken and sear for 3-4 minutes
stir, season with other ½ of seasoning with a pinch of salt
cook 2-3 more minutes until 165
top with vegetables, feta, pine nuts and sour cream
