2 Chop tomatoes and scallions
While beef is cooking, core tomato, halve lengthwise, and use spoon to scoop out insides. Cut into ½" dice Trim and slice white portions of green onions into ½" pieces. Thinly slice remaining green onions on an angle. Keep white and green portions separate. Add chopped tomatoes and white part of green onion to the beef and seasoning with half taco seasoning. Add black beans and stir. add ¼ c water and bring to a simmer till tomatoes are tender, 5-7 min. Remove from heat. While beef filling cooks, start queso sauce....

3 Queso Sauce
In a microwave safe bowl combine cheese sauce, hatch green chilis, remaining taco seasoning,a nd 2 oz water. Stir till smooth and cover with a damp aper towel. Microwave on high for 1 min. Carefully remove bowl and stir till smooth. Repeat in the microwave. While cheese sauce heats, prepare tortillas.

4 warm tortillas, plate
Wrap tortillas in a damp paper towel and microwave until warmed, 30-60 seconds. If tortillas come folded, keep folded. Divide filling amongst 6 tortillas, top with cheese and roll o\up. Top enchiladas with chile con queso sauce. Garnish with green onions and tortilla strips. Bon APpetit!
