To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:

Stem, seed, remove ribs, and halve red bell pepper. Slice into ½ thick piece.

In a mixing bowl combine slaw mix and a pinch of salt and massage
Separate sliced pork into a single layer and pat dry, and season with a pinch of salt.
Place a large non-stick pan over medium-high heat. Add 1 tsp. olive oil and bell pepper to hot pan. Stir occasionally until tender, 5-8 minutes. Season with a pinch of salt and pepper.
Make sauce with peppers
Add chopped pineapple, chipotle seasoning, chicken demi, and 3 Tbsp water to the pan and bring to a simmer, 3-5 min. Remove from heat and cover to keep warm
Place a large non-sick pan over medium-high heat and add 1 tsp. olive oil Add Sliced Pork to pan. Stir occasionally until no pink remains and steak strips reach a minimum internal temperature of 140 degrees, 3-5 minutes. Season with a ¼ tsp salt and pinch of pepper
Add cooked pork to peppers and sauce and stir to coat.
Add cilantro crema sauce to slaw mix and stir to combine. Wrap tortillas in a damp paper towel and microwave until warm, 30-60 seconds. Build tacos like the photo. Bon Appetit!
