Cooking Guidelines

To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:

  • Steak and Pork 145° F (rest cooked meat, 3 minutes) |
  • Seafood 145° F |
  • Chicken 165° F |
  • Ground Beef 160° F |
  • Ground Turkey 165° F |
  • Ground Pork 160° F

    Roast the Fries

    Cut potatoes into 1/4" fries and pat dry.

    Place fries on one prepared baking sheet and toss with 2 tsp. olive oil, potato spice seasoning, and a pinch of salt and pepper. Spread into a single layer.

    Roast in hot oven until slightly browned and tender, 25-30 minutes, tossing fries halfway through.

    Carefully remove from oven.

    While fries roast, continue recipe.

    Make Cheese Crisps and Prepare Ingredients

    Evenly divide cheese into two piles on second prepared baking sheet. Gently spread into 3-4" circles.

    Bake in hot oven until golden-blonde, melted, and bubbling, 3-5 minutes.

    Carefully remove from oven. Let crisps cool, 5 minutes.

    While crisps bake and cool, halve tomatoes. If you receive one whole tomato instead, not to worry; simply core tomato, cut into 1/2" dice, and proceed with recipe instructions.

    Peel and halve shallot. Slice thinly.

    Stem jalapeño and mince. Wash hands and cutting board after working with jalapeño.

    Combine ground beef and a pinch of salt and pepper. Form mixture into two equally-sized patties, about 5" across. Season both sides with 1/2 tsp. salt and 1/4 tsp. pepper.

    Make the Chutney

    Place a medium non-stick pan over medium heat. Add bacon to hot, dry pan and and stir occasionally until starting to render, 1-2 minutes.

    Add shallots and stir occasionally until softened, 2-3 minutes.

    Add tomatoes and stir occasionally until tomatoes have softened and broken down, 4-6 minutes.

    Add sugar and vinegar and stir occasionally until jammy, 1-2 minutes.

    Stir in half the jalapeños (to taste; reserve remaining for guacamole) and a pinch of salt.

    Remove from burner. Transfer to a plate and set aside.

    Wipe pan clean and reserve.

    Cook the Patties

    Return pan used to cook chutney to medium-high heat.

    Add patties to hot, dry pan and cook until patties reach a minimum internal temperature of 160 degrees, 3-5 minutes per side.

    Remove from burner.

    Toast Buns and Finish Dish

    Drizzle cut-sides of buns with 2 tsp. olive oil and season with a pinch of salt and pepper.

    Place buns directly on oven rack in hot oven, cut-sides up. Toast until lightly browned, 3-4 minutes.

    Carefully remove from oven.

    While buns toast, combine guacamole (to taste), remaining jalapeños (to taste), and a pinch of salt in a mixing bowl.

    Plate dish as pictured on front of card, topping bottom bun with guacamole mixture (to taste), patty, chutney, cheese crisp, and top bun. Bon appétit!
